Turkey Breast with Gravy

defrosted turkey breast
2
medium carrots cut into 2 inch pieces

medium onion, cut into large pieces

cups water

bay leaf

tablespoon olive oil

teaspoon cracked pepper
1
teaspoon rubbed sage leaves

teaspoon salt
1/2
teaspoon dried thyme leaves
 

 

Place turkey breast, breast side up, in shallow pan.  Add carrots and onion.  Place in bottom of pan with water and bay leaf.  Brush turkey with oil and rub with mixture of seasonings.  Roast in 325 degree oven until done.  Remove turkey from pan.  Strain remaining pan juices and reserve to use in gravy.  Serve with Creamy Turkey Gravy.

cup butter
1/2
cup all-purpose flour
2 1/2
cups water
1/2
cup turkey broth or chicken broth or water
1
teaspoon coarsely ground black pepper
1/4
teaspoon salt
1/4
teaspoon thyme leaves
1 1/2
teaspoon Kitchen Bouquet, if desired
 

 

In 3 qt. saucepan, melt butter until sizzling.  Whisk in flour to make a smooth paste.  Brown 3 minutes.  Gradually whisk in water and broth.  Cook over medium heat until mixture comes to a boil (5-7 minutes).  Stir in remaining ingredients.  Yield:  3 cups.

 

If turkey broth is not available, you can use chicken broth or just water.
